One tub of soft fresh goat’s cheese - we used a local goat’s cheese from Delamere Dairy
One organic orange rind finely grated
50 Gms icing sugar
A generous handful of Amaretti almond biscuits
Clippy’s Apple, Rudebarb & Ginger Jam

Roughly crush the biscuits and mix in a generous spoonful of the jam
Press into small ramekin dishes lined with cling film
Beat the goat’s cheese with the grated orange rind and icing sugar
Spoon over the crushed biscuit mixture
Allow to cool and set in the fridge
Unmould and top with jam
Serve and enjoy…
