Yellow Mellow Soup
1 tablespoon of butter
1 onion chopped
1 creamy white cauliflower chopped
2 bay leaves
¼ teaspoon crushed saffron stamens
1 small pot of crème frâiche
Clippy’s Apple, Saffron & Cumin Chutney
Gently sweat the onions in the melted butter until very soft and melting
Add the chopped cauliflower, bay leaves and barely cover with water
Cook until soft and tender
Remove the bay leaves
Add the saffron and stir in half of crème frâiche
Blitz with a hand held blender until smooth
Serve with a dollop of the crème frâiche and Clippy’s Saffy Apple & Cumin chutney
